This could be Northern Thailand’s de facto signature dish, a coconut and curry-flavored noodle soup, coconut milk, stretchy, eggy and crispy noodles. These are the basic ingredients, but let’s not forget the chicken. Chicken legs are boiled with curry and slow cooked for two hours.
