Sammy Carolus, general manager of Hyatt Regency Hua Hin, has appointed Mr. Anthony Munn as executive chef of the resort.An Australian national, Chef Anthony is originally from New Zealand, and has a strong classical culinary background with 33 years of experience. He began his career in 1980 at the Hermitage Hotel Mt Cook in the Southern Alps, prior to moving to Australia.
After he moved to Australia, he worked with many resorts and stand-alone restaurants all over Australia and the Pacific including hotels in the Starwood chain.In June 2007, Chef Anthony joined Hyatt Regency Perth as chef de cuisine, Banquet and Convention Services, followed by chef de cuisine, outlets.
Thanks to his dedication and outstanding performance, he was promoted to executive sous chef at the same hotel and with his new responsibilities, oversaw the kitchen operations and food quality at three outlets, the banquets department in the hotel, as well as the Royal Perth Yacht Club which caters for elite events of 2,500 guests.
In his newly appointed position, Chef Anthony oversees Hyatt Regency Hua Hin’s four restaurants and bars, and the hotel’s banqueting facilities for up to 400 people including off-site events. Commenting on his appointment as executive chef of Hyatt Regency Hua Hin, Chef Anthony said, “The relocation to the beautiful beach paradise of Hua Hin is a wonderful privilege to experience Thai culture.
Hua Hin is famous for fresh seafood and Thailand is known as a paradise of fresh tropical vegetables and fruits. This is beneficial to all chefs as we can easily find quality products and ingredients that enable us to create mouth-watering delicacies to delight our guests.
